The new operator will need to make this pub the go to sports experience with excellent online marketing and customer service.
To compliment the sports offer a regular entertainment programme can be introduced, drawing in crowds and giving customers a reason to stay longer. Middleton's can be further developed without losing the football crowd heart of the bar. There is a need to be attract new customers and these could be young professionals, students, millenials and Gen Z’s all currently strangers to Middleton’s in it’s current under invested form.
A basic food offer of paninis, toasties and pizzas/pies could be developed and served from the bar. The new operator will need to be experienced in sports focused hospitality offers, with a drinks background and an understanding of events management, ideally with good knowledge of Scottish football, maximising the proximity of the bar to Hibernian's Football stadium Easter Road.
